Tuesday's Tidbit-Blueberry Bonanza

This week's Tuesday Tidbit= YUMMY!!! You all know that blueberries are my favorite and as I feel summer slipping away (even though it is still 113 degrees outside), I need to get all of the blueberries I can get. I found this recipe from the domestic goddess, Martha Stewart. It really is pretty easy. I am not a fan of coconut, so I eliminated it from the almond granola topping.
Enjoy!

Blueberry Bonanza Bars
Vegetable-oil cooking spray
1/2 cup slivered almonds, toasted
2 cups all-purpose flour
3/4 cup confectioners' sugar
1 1/2 teaspoons baking powder
1/2 teaspoon coarse salt
3/4 cup (1 1/2 sticks) unsalted butter , cold, cut into pieces
1 large egg
1 large egg yolk
3/4 teaspoon pure vanilla extract
1 1/2 cups blueberry jam
Almond Granola (see below)
{Almond Granola
2 tablespoons unsalted butter
2 tablespoons honey
1/4 cup packed light-brown sugar
1 1/2 cups old-fashioned rolled oats
1/3 cup slivered almonds
1/4 cup sweetened shredded coconut

Directions
Melt together butter and honey in a small saucepan over low heat. Add sugar; stir until sugar has dissolved, about 2 minutes. Remove from heat. Stir in 2 tablespoons water. Stir together oats, almonds, and coconut in a large bowl. Pour butter mixture over oat mixture; stir until combined. }
Blueberry Bonanza Bar Directions
1. Line a 9-by-13-inch baking dish with foil, allowing a 2-inch overhang. Coat with cooking spray. Set aside.
2. Process almonds in a food processor until finely ground.
3.Add flour, sugar, baking powder, and salt; pulse to combine. Add butter; process until mixture resembles coarse meal.
4. Lightly beat egg, egg yolk, and vanilla in a small bowl. With processor running, add egg mixture; process just until clumps form. Pat dough into bottom of dish; refrigerate until firm and cold, about 30 minutes.
5.Preheat oven to 350 degrees. Prick dough all over with a fork. Bake until edges are golden, about 25 minutes. Let cool on a wire rack.
6. Spread jam over crust; top with granola. Bake until jam is bubbling and granola topping is browned, about 30 minutes.
7. Let cool on wire rack. Lift out, and cut into squares.

From Wild Woman to Little Girl...

Mini #2 desperately needed a haircut. Some days it curled nicely, other days she was the WILD BEAST (and not just in attitude).

BEFORE

DURING

AFTER

Mini #2 loved getting her locks cut. This experience was much different than when her brother got his first haircut. That experience led to physical restriction, sweat, many tears, and emotional scarring. This little princess is already asking for another haircut.

Wordless Wednesday~Shine Sweet Lisa

I know the entire point of Wordless Wednesday is to be well, Wordless, but I felt I needed to share some words today. I apologize for my completely scattered blogging and lack of posting and commenting. To say life has been crazy would be an understatement for me. I will explain more later.
However, yesterday I learned that the sweet and amazing Lisa fromBumpkin on a Swing passed away from a fast and aggressive form of ovarian cancer. Talk about shining...Lisa was a bright star here on Earth and I know she is SHINING down today.

The beautiful and amazing Trish from Pink Preppy Lilly Lover had such a close friendship with her. It was a deep friendship, one of true soul sisterhood. I have told Trish on several occassions how much I admired their friendship.

I have not been able to stop crying and thinking about Lisa, her family, her husband, Trish, and all of her other friends and those she touched in her too short life. Life is so short and I have squeezed my children just a little tighter today.

Thank you sweet Lisa for shining down on us...keep your star bright!

Shine on Me Tooth Fairy!

I know the Tooth Fairy is only supposed to come around when you lose a tooth and need some quick cash, but I need that little fairy PRONTO!
I need her to pop on over and sprinkle some Tooth Magic Dust upon me and make all of my dental issues disappear.
Surely as a fairy she has something that will work. The Fairy Godmother had "Bippity, Boppity, Boo...", the Magic Fairies have always gone with "Abracadabra," and Mini #1's magic still seems to work with "Alecazandra, Alecazandra, Poof."

Sorry for my absence lately. "When it rains, it pours..." So much is going on that my head is spinning and then when it stops for a brief moment, I realize that I have those two precious minis that are depending on my for all the mothering and developmental needs.

The pouring rain issue of the moment is my tooth.

I am in serious pain. I went to a dentist on Friday after exruciating pain on Thursday night. I have good oral hygiene, but apparently this stems from a filling from childhood. The super duper news is that I get the choice of a root canal or extraction. YIPPEE!!!

It is my last tooth and I chose to have it extracted. I'll officially be toothless. I have much anxiety about it. I HATE, HATE, HATE all things dental related.

Pray for me during this time and send the Tooth Fairy my way with some of that magic dust. :)

Happy Monday!
